Mozaic is a fine-dining restaurant in Ubud, Bali, Indonesia. Known for its innovative cuisine, a fusion of French and local Indonesian ingredients, the restaurant has been named among Bali’s best since it opened in 2001. It’s been a hot favourite among Bali diners ever since.
In 2023, Mozaic welcomed a new chef/partner, Blake Thornley.
Blake worked as an Executive Chef at Mozaic from 2010 – 2015. Later, in 2017, Chef Thornley opened several restaurants in Shanghai, China, winning several awards, including “Best Restaurant in Shanghai”.
His influence is felt in many dishes with spices more common in China and new cooking techniques. Working with a new partner 20 years his junior brings fresh energy to the redesigned restaurant.
Thornley has brought his own unique style to Mozaic. He continues to use fresh, local ingredients, but he has also introduced new flavours and techniques to the menu. The result is a dining experience that is both creative and delicious.
A new bar at the front has put a renewed focus on cocktails that can be paired with the menu. Music and wine nights feature as well brining a new casual elegance to the garden restaurant.
Two menu options: A seasonal menu and a botanical menu opens the restaurant up to vegetarian diners as well, with some incredible dishes like a ‘beef’ carpaccio with rendang spices and parmesan tofu, a stand out dish called The Whole Onion and a vegan take on sausages and mash.
The seasonal menu is ingredient-driven with dishes including a stunning wagyu, seared scallops, foie gras and slow cooked lamb.
Remaining true to its roots despite a stylish redesign and a new partner in the kitchen, Mozaic remains one of Bali’s best dining experiences.
